Ingredients

  • 3-4 oz Roux, pale

  • 1 ½ quarts White stock (chicken, veal or fish)

Directions

  • Melt butter in a pot over medium-low heat.
  • Add flour and cook until pale in color.
  • Add stock and stir until roux is dissolved.
  • Simmer for a minimum of 20 minute, skimming as necessary.       
  • Strain using a fine strainer and use or cool, label and store.
